Mushroom Pie

I like pies but seldom bake them as my kids cringe their noses whenever I bake pies. All they want is the crust, crust and more crust. That's it. Nothing else. It's not fun to eat everything by ourselves, knowing that the prince and princess don't like them. But then, it's nice to have some homemade pies. Well, not entirely as I usually use store-bought pastry. :)

Ingredients
As shown in picture no. 1
10 pcs of fresh champignon mushroom-sliced thinly
1 pack of puff pastry
1 pack of short crust pastry
1 can of Campbell's mushroom soup (I need to work out a recipe for this! :)
1 cup of corn nibblets
1 cup of green peas
1/2 cup of sugar snap
1/2 cup of cubed carrots
1 medium-sized onion-cubed/minced
3 cloves of minced garlic
Salt and pepper to taste

Method
  1. Heat a frying pan with some oil.
  2. Fry garlic and onions till soft.
  3. Add in carrots, green peas, corn nibblets, sugar snaps and champignon mushrooms and fry till cooked.
  4. Transfer everything to a pot and add in mushroom soup.
  5. Simmer at low heat for about 10 mins and add salt n pepper to taste.
  6. In the meanwhile, prepare your baking pan with the store-bought short crust pastry and bake according to instructions on the packaging.
  7. Pour all mushroom mixture into the baking pan. 
  8. Cover the pan with puff pastry and crimp the edges. 
  9. Bake at 200 degress for about 20mins or till golden brown.
  10. Serve with a salad or any other side dishes.I made some oven-baked fries since my kids don't eat the pie.
